Chick Pea Soup with Spinach

Equipment

  • Medium Soup pot
  • Blender or Food processor

Ingredients
  

  • 1 tsp vegetable oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 19 oz can chick peas drained and rinsed
  • 1 1/2 tsp minced fresh sage or 1/2 tsp dried.
  • 1/4 tsp pepper
  • 2 cups vegetable broth
  • 1 cup fresh spinach or half 10oz package frozen chopped spinach thawed and squeezed dry.
  • 1/2 tsp salt
  • 2 tbsp lemon juice

Instructions
 

  • In a medium soup pot heat the oil. Add onion, cook stirring as needed until softened, about 5 minutes.
  • Add the garlic, cook stirring 1 minute.
  • Stir in chick peas, sage and pepper
  • Stir in broth, spinach & salt, bring to a boil.
  • Let it cool a bit then either use a hand blender or a food processor to process
    being very careful of hot splatters.
  • Simmer for 5 minutes stirring in the lemon juice.
