
Chick Pea Soup with Spinach

Equipment
- Medium Soup pot
- Blender or Food processor
Ingredients
- 1 tsp vegetable oil
- 1 onion chopped
- 3 garlic cloves minced
- 1 19 oz can chick peas drained and rinsed
- 1 1/2 tsp minced fresh sage or 1/2 tsp dried.
- 1/4 tsp pepper
- 2 cups vegetable broth
- 1 cup fresh spinach or half 10oz package frozen chopped spinach thawed and squeezed dry.
- 1/2 tsp salt
- 2 tbsp lemon juice
Instructions
- In a medium soup pot heat the oil. Add onion, cook stirring as needed until softened, about 5 minutes.
- Add the garlic, cook stirring 1 minute.
- Stir in chick peas, sage and pepper
- Stir in broth, spinach & salt, bring to a boil.
- Let it cool a bit then either use a hand blender or a food processor to processbeing very careful of hot splatters.
- Simmer for 5 minutes stirring in the lemon juice.
