1lbbeets, raw or cooked and packaged.Cooked packaged beets can be found in many grocery stores.
2Tbspolive oil
5Tbspsherry vinegar
1 1/2cupsbaby arugula
1`ouncegoat cheese
2Tbspchopped walnuts
Instructions
If you have raw beets, wash them, place them individually in foil and bake them in a rimmed baking dish for 45 minutes to 1 hour. Fork test them.Either use rubber gloves to gently rub off skins or cradle the beets in paper towels to rub the skins off.
Whisk oil, vinegar, 1/4 tsp salt & 1/4 tsp pepper in a small bowl. Slice the beets and toss to coat in the oil mix. Let sit at room temp for 10 minutes.
Add arugula to beets, gently toss to coat, sprinkle with goat cheese and chopped walnuts. Yummy!
