
Beet Salad with Goat Cheese and Walnuts
A healthy salad for two.
Ingredients
- 1 lb beets, raw or cooked and packaged. Cooked packaged beets can be found in many grocery stores.
- 2 Tbsp olive oil
- 5 Tbsp sherry vinegar
- 1 1/2 cups baby arugula
- 1` ounce goat cheese
- 2 Tbsp chopped walnuts
Instructions
- If you have raw beets, wash them, place them individually in foil and bake them in a rimmed baking dish for 45 minutes to 1 hour. Fork test them.Either use rubber gloves to gently rub off skins or cradle the beets in paper towels to rub the skins off.
- Whisk oil, vinegar, 1/4 tsp salt & 1/4 tsp pepper in a small bowl. Slice the beets and toss to coat in the oil mix. Let sit at room temp for 10 minutes.
- Add arugula to beets, gently toss to coat, sprinkle with goat cheese and chopped walnuts. Yummy!
